the reason why the rice is shaped like a “fan” is because it matches the shape of your mouth. when the rice enters your mouth, it should break, letting the fish touch different parts of your tongue.
also, wasabi mixed with soy sauce is allowed. if the fish needs wasabi, then the chef will already have the right amount between the fish and the rice. if you want more, then you want more. mix it into soy sauce all you want.
Japan’s sushi is like Italy’s pizza and America’s hamburgers. You don’t see chefs screaming at you for eating a burger/pizza with a fork and a knife or dip them into ranch dressing. It’s food. It’s there to be eaten. So eat it, and don’t obsess over the rules that may or may not be enforced at some super expensive restaurants in some parts of the world.
